Akashi new release bottles here! They are 5 years maturation but have strong characteristics already.
Yellow one is 5y Bourbon Barrel 1st fill, 50% ABV. Green one is 5y, 3y in Hogshead and 2y finish in Anejo Tequila Cask, 61% ABV!!
Yellow one: first note is like chardonnay but with Japanese incense stick and a hint of honey. Palate is more thicker chardonnay and paulownia wood. Middle finish in very mild Japanese wood flavor.
Green one: Japanese fir, aniseed and dry hop nose. First palate is phosphorus from match box, fennel and fir. Very short and piercing alcohol comes to upper throat. Interesting and strange experience!
